Spinach

I like Spinach. Popeye definitely knew what he was doing when he consumed can after can of spinach. The vegetable has slowly crept into the number one spot on my favorite vegetable list, edging out asparagus and cauliflower. Of course, if it were "Andy the Sailor Man", my spinach would be fresh or frozen, and steamed to perfection.

This delicious side dish has always had the stigma of YUCK (at least it did for me growing up). I was probably in college when I first tried spinach--and I was hooked. Despite looking like freshly mowed grass clippings, I have found that I can eat spinach with the same excitement and enjoyment as I would potato chips or cookies. Crazy, right?

So the next time you need a quick side dish or vegetable to go along with your meal, pick up some fresh or frozen spinach. And before you know it, your forearms will be abnormally large as well!
