This delicious side dish has always had the stigma of YUCK (at least it did for me growing up). I was probably in college when I first tried spinach--and I was hooked. Despite looking like freshly mowed grass clippings, I have found that I can eat spinach with the same excitement and enjoyment as I would potato chips or cookies. Crazy, right?
If you're wondering, and I know all 20 of you reading this are, here are some of the benefits of adding spinach to your diet (courtesy of WebMD):
- Help fight off osteoporosis, heart disease, arthritis, and several types of cancer
- Loaded with vitamins, minerals, fiber, antioxidants, heart-friendly A and C vitamins, folate, and magnesium
- Low in calories
